Ephraim is survived by his wife: Katie Stoltzfus of Princeton; two daughters: Emma and Sarah Stoltzfus; parents: Ephraim Stoltzfus, Sr. and Annie King Stoltzfus; five sisters: Naomi Stoltzfus and husband, Dan, Emma Stoltzfus and husband, Amos, Sadie Blank and husband, David, Fannie King and husband, Elmer, and Elizabeth Stoltzfus and husband, Ephraim; four brothers: David Stoltzfus and wife, Salome King Stoltzfus, John Stoltzfus and wife, Elizabeth, Amos Stoltzfus and wife, Elizabeth, and Samuel Stoltzfus and wife, Barbie King Stoltzfus.
